INGREDIENTS PER 8 PEOPLE
Dried white beans or canned, 13 oz. Or 21 oz.
Fine cornmeal, 2.6 oz.
Caster sugar, 6.2 oz.
walnuts, 3 oz.
Butter/extra virgin olive oil, enough to grease the pan
Icing sugar, enough to cover the cake
Grease the pan. Blend beans and cornmeal
Beat yolks and sugar till fluffy then add the bean mixture and grated lemon zest.
Ground the walnuts and add them to the mixture.
Whisk egg whites until stiff and add them to the dough.
Pour the cake into the tin and bake at 360°F for 30-40 minutes
Let it cool and sprinkle with icing sugar.
