3 grains milk, 1 cup + 1 tbsp
vegetable whipping cream, 1 cup + 1 tbsp
brown sugar, 1/2 cup
chopped dark chocolate, 1 + 1/4 cup
carob flour, 1/2 tsp
salt, 1/4 tsp


Preheat the gelato machine before putting the bowl in. In a saucepan add 3 grains milk, the vegetable whipping cream, carob flour, salt and brown sugar and bring to boil.
Turn off the heat, add the dark chocolate cut into small pieces, and let it rest for a few minutes.
After that, stir the chocolate mixture constantly with a whisk until the chocolate is completely melted and smooth.
Let cool to room temperature and then refrigerate the cream until it will be completely cold for at least 2 hours.
Pour the mixture into the basket of the gelato machine (for me Il Gelataio ICK5000 De Longhi). Turn it on and let work for about 25 minutes.
Once reached the desired consistency, place the gelato in a container and store in freezer until ready to serve.
