INGREDIENTS PER 4 PEOPLE

whole milk, 6,7 fl oz
cream, 10 fl oz
sugar, 1 oz
egg whites, 2
white chocolate, 3,5 oz
vanilla stick, 1

PROCEDURE

In a blender chop chocolate finely. In a saucepan heat milk, then add withe chocolate, vanilla and the cream. Boil it at 80°C for 1 minute. Let it cool in the fridge for 2 hours.
Beat egg whites in another bowl, then add it cream to the milk and at the end add gently the egg whites.
Pour the mix into the Gelato maker – previously cooled in the freezer – and freeze according to the manufacturer’s instructions (about 40-45 minutes).
Serve and decorate with chocolate sauce and white chocolate pieces.
