INGREDIENTS PER 6 PEOPLE
milk, 1/2 cup
cream, 1 1/2 cup
white sugar, 3/4 cup
sage, 15 leaves
candied ginger, 1 1/2 oz + few pieces
In a pot put infuse the chopped sage leaves and candied ginger in the milk for an hour. Strain and set aside.
In a saucepan heat the cream and add the sugar.
Stir well and let it cool, then add the cold milk.
Pour into the drum of Il Gelataio – previously cooled in the freezer – and operate the shovel. The gelato will be ready in about 25 minutes.
Keep the gelato in the freezer until ready to serve.
Serve the gelato with pieces of candied ginger.
