INGREDIENTS PER 4 PEOPLE
blueberry, 3,5 oz
raspberry, 3,5 oz
egg whites, 2
water, 1,6 fl oz
sugar, 3,5 oz
PROCEDURE
In a saucepan heat mixed berries, water and sugar, let them soften completely. Mix well and let it cool in the fridge for few hours.
When the mix is cool add the cream and combine well it.
Whisk egg whites very well and then put the mix into the Gelato – previously cooled in the freezer – maker and freeze according to the manufacturer’s instructions (about 40-45 minutes).
Serve and add fresh berries.
