INGREDIENTS PER 5 PEOPLE

aubergines, 4
sweet peppers, 3
courgettes, 4
large onions, 2
sunfloer oil, a glass
white wine vinegar, half a glass
sultanas, 2 tablespoons
sugar, 2 teaspoons
salt, to taste
pepper, to taste
oregano, to taste

PROCEDURE

Wash and dry all the vegetables throughly. Cut aubergines, peppers and courgettes into even-sized cubes. Roughly slice the onions. Soak the sultanas in water then rinse, drain and squeeze dry them.
Put all the vegetables and sultanas into an oven dish and season with salt,oregano and oil.
Sprinkle the white wine vinegar and sugar onto the vegetables.
Cover with foil and cook at 200 degrees for 50 minutes.
