INGREDIENTS PER 36 PEOPLE

Cornmeal, 26 Oz
All-purpose flour, 8 Oz
1 pinch Baking powder
Salt, 1/4 teaspoon
Sugar, 3 Oz
Butter, 5 Oz
Eggs, 2
Raisins, soaked in warm water, 3 Oz
Pine nuts, 2,4 Oz
Milk, 8 Oz
Vanilla, 1 teaspoon
Lemon zest, grated

PROCEDURE

Preheat the oven to 350 °F.

Mix together the cornmeal, flour, salt and baking powder.

With an electric mixer beat the butter and the sugar together. Beat in the eggs, one at a time.

Add the flour mixture and beat until smooth. Then dd the drained raisins, pine nuts, milk, grated lemon zest and vanilla. Mix well.

Shape the mixture into small oval cakes about 3.2 inches long, using your hands. Then place them onto a lightly buttered baking sheet.

Bake for about 15-20 minute. The baking time varies according to the size of the “zalti”.
