INGREDIENTS PER 4 PEOPLE

Big potato, 1
Medium leek, 1
Water, 14 fl Oz
Broad beans of green peas (an ingredient that usually people throw away), 14 Oz
Salt
Pepper
Extra virgin olive oil
Small cubes of stale bread, 2 Cups
Fresh goat cheese, 3 Oz
1 firm and ripe tomato .

PROCEDURE

In a pressur pot ,heat Evo and add the well chopped leek and sautè it , until softer .
Add the potato peeled and cutted in big cubes ,then all the beans well cleaned and rinsed . Pour in it water and close very well the pot , from the starting whistle , cook for
20 minutes .In a pan toast the cubes of bread with 4 tablespoons of Evo and salt , tossing them occasionally .
Let it cool , then puree all the mixture with a vegetable mill adding salt and pepper to taste . Stir and serve topping with toasted cubes of bread ,small cubes of tomato and flakes of goat cheese . Drizzle with Evo and pepper .
