INGREDIENTS PER 6 PEOPLE

Bitter chicory
bacon in small pieces, 5,3 oz
egg,1
sweet cheese, like Italian Provolone
grated Parmesan Cheese
onion
breadcrumbs
dried majoram
pepper
salt
oil

PROCEDURE

Wash, cut and put the bitter chicory in a pot with boiling water. Cook it for about 20 minutes. Meanwhile, lightly fry both onion and bacon.
When the bitter chicory is cooked, let it cool on and prepare the other ingredients. Grate Provolone and Parmesan. Cut the bitter chicory, removing water. Take a large bowl and add onion and bacon
with oil, egg, grated Provolone and Parmesan cheese, dried marjoram, a little pepper and
salt to taste. Finally, add bread crumbs, but remember that the mixture must not be too dry.
If it is, add some oil.
Take a large baking tray, grease it with oil and sprinkle with few breadcrumbs.
The pie should be about 1.5 cm high. Pour the mixture in the tray and cover it with grated Parmesan and breadcrumbs to create a nice crust. Cook it for about 30 min.
Turn on the grill and leave the pie in the oven 5 min. more, but check anyway that it does not burn.
