INGREDIENTS PER 4 PEOPLE

zucchini, 1 medium (keep apart 7 slices and chop the rest)
spring onions or scallions, 1 diced
garlic. 1 diced clove
flour, 2 cups
grated parmigiano cheese, ½ cup
salt, 1 tsp
baking powder, 2 tsp
eggs, 3
olive oil, ½ cup + 2 tbsp
sour cream, 1 cup
sliced cherry tomatoes, 5

PROCEDURE

Preheat the oven to 360 degrees. Toss onions in 2 tbs olive oil till they soften.
Remove from the pan and add the zucchini, previously chopped. Toss for 10 minutes then remove from the pan, replacing them with sliced tomatoes that must be tossed till slightly browned.
Combine dry ingredients in a bowl and set aside, stir together onions, zucchini and wet ingredients.
Add the dry ingredients and stir again, till combined. Pour the mixture into a large pie plate and decorate the top with tomatoes and zucchini slices. Bake for 40 minutes or until golden brown.
