pastry flour, 2+1/2 cup
egg yolks, 2
sugar, 1/2 cup
unsalted butter, 1 stick
1 grated lemon peel
a pinch of salt
cherry jam – or your favorite jam, 9 oz


Process the butter until soft and creamy. Put flour and sugar on a wooden working surface then add the egg yolks, grated lemon zest, butter and a pinch of salt. Knead until you get a smooth dough.
When ready, divide the shortcrust pastry in 2 parts:
– roll out, with your hands, 2/3 of the dough in a baking pan alredy greased with butter and flour
– use half of the dough left to shape some stripes, cover the borders pressing them gently to connect them with the base. Now, spread cherry jam over the patsry.
Use the dough left to create the decorations: stripes, small circles, hearts…Bake your tart in preheated oven at 360°F for about 30 minutes, till the edges get golden brown.
