Puff Pastry, 2 Rolls

For the custard:
Egg Yolks, 4
Cornstarch, 1,4 Oz
Sugar, 90 gr
Vanilla, 2 Packets
Milk, 1,5 Oz
Candied fruit, 4 Oz
Apricot jam, 4 Tablespoons


Heat on a cook milk and vanilla, while whipping egg yolks and sugar in a bowl. Sift the cornstarch, pour in the egg mixture and add a bit of milk, to soften. Cook on low heat, the stir well to make it cool down faster.
Flat the dough on a floured surface and top it with a layer of cream, leaving a border of 1.5 cm. Add diced candied fruit. Form a roll with the dough, slice it (1 to 1.5 cm wide slices). Spread a little jam on each slice surface. Repeat the procedure with the second roll of dough.
Cover a baking tray with a sheet of parchment paper and bake for 20 minutes at 180 ° C.
