INGREDIENTS PER 3 PEOPLE

Four deep-fried artichokes (carciofi alla Giudìa)
Chopped artichoke hearts, 2 Oz
Salt with herbs
Puff pastry rolled out to a rectangle, 8 Oz
Prime mixed ground meat, 5 Oz
grated Parmigiano Reggiano, 2 Oz
poppy-seeds

PROCEDURE

Season the ground meat with the salt with herbs and the artichoke hearts (Gransalsa), then stuff the artichokes. Roll out the puff pastry, then cut it into four squares. Place a stuffed artichoke top down on each square of puff pastry.
Gather the corners and sides of each puff pastry square together, closing each artichoke inside.
Tie with chives or kitchen twine and then decorate with herbs and poppy-seed.
