self raising flour, 250 gr
corn flour, 2 tbsp
the juice and the zest of one large lemon
1 egg
butter, 7 tbsp
sugar, 1/2 cup
sugar and icing sugar for rolling


Kneat butter and sugar till they get a creamy consistency. Wash the lemon and grate the zest, squeeze its juice and add it to the mixture. Then, add the egg, the cornflour and the flour. Stir well.
Shape the dough into a roll and let it rest for an hour. Make walnut-size balls, roll them into caster sugar and then into icing sugar. Line them up on a baking tray covered with a sheet of baking paper and cook for 350° F from 12 to 15 minutes, until slightly golden. There should be cracks on top.
