INGREDIENTS PER 2 PEOPLE
Carnaroli Rice, 6 Oz
Leek, 1/2
Medium-aged Montebore, 3 Oz
Pear, 1
Vegetable Broth
Salt
Pepper
Extra virgin Olive Oil
Sweet red Wine
White Wine
A small knob of Butter
PROCEDURE
In a skillet, toast the rice with two tablespoons of oil for 2 minutes, then add some white wine and let it evaporate. Then, add hot broth and the thinly sliced leek. Continue cooking, adding some more broth when necessary. When the rice reaches the right consistency, turn off the fire and add Montebore cheese, diced. Whisk risotto and serve in a plate. Ultimate with some pear you previously prepare in the following way: clean and peel the pear, then cut it into cubes and sauté in a pan with a little butter. Add some red wine and cook for about 2 minutes.
