INGREDIENTS PER 2 PEOPLE

Carnaroli Rice, 6 Oz
Leek, 1/2 

Medium-aged Montebore, 3 Oz 

Pear, 1 

Vegetable Broth 

Salt
Pepper
Extra virgin Olive Oil
Sweet red Wine
White Wine
A small knob of Butter

PROCEDURE

In a skillet, toast the rice with two tablespoons of oil for 2 minutes, then add some white wine and let it evaporate. Then, add hot broth and the thinly sliced ​​leek. 
Continue cooking, adding some more broth when necessary. When the rice reaches the right consistency, turn off the fire and add Montebore cheese, diced. Whisk risotto and serve in a plate. 
Ultimate with some pear you previously prepare in the following way: clean and peel the pear, then cut it into cubes and sauté in a pan with a little butter. Add some red wine and cook for about 2 minutes.
