pastry flour, 2 ½ cups
water, ½ cup
extravirgin olive oil, 0,8 oz
salt, 1/2 tsp
stracchino cheese, 9 oz


Make a well in the flour, pour in all the ingredients (except for the cheese), then knead till you get a soft
dough. Divide it in two, then cover, and let it rest for 15 minutes.
Heat the oven to 220C. Take a 30 cm round baking pan and oil it. Roll one of the dough pieces till
it becomes slightly bigger than the tray. Lay in on the tray and cover it with cheese. Roll
the other piece of dough and cover the first one sealing the edges. Brush the surface with some oil
and cut in several parts with a pair of scissors. Bake for 15/20 minutes, till the focaccia surface gets slightly golden.
Serve hot.
