Pumpkin, 21 Oz
Potatoes, 21 Oz
Mushrooms, 7 Oz
Leek, 1 Oz
Vegetable Broth, 13 Oz
Small Garlic clove, 1
Olive Oil, 2 Tablespoons


Wash and peel potatoes and the pumpkin. Steam-cook them for about 10 minutes. Clean the mushrooms and cook them in a non stick pa with a little oil and garlic.
Put chopped leek and 1 tbs oil in another nonstick pan.
Warm over medium heat and add quickly 2-3 tablespoons of vegetable broth. Do not fry it.
Add pumpkin pulp and potatoes.
Stir for a few minutes and stew.
Add all vegetable broth, stir and cook, covered with the lid, for 10 minutes.
Blend the content of the pot wand let cook 10 more minutes, stirring occasionally.
Serve the pumpkin cream decorating each plate with mushrooms.
