wheat flour, 1 cup
durum wheat flour, 1 cup
water as needed
“tastasal” i.e. pork sausage typical of Verona, 7 oz
steamed pumpkin, 7 oz
garlic, 1-2 cloves


Mix the two types of flour and add water. Begin to knead the dough. If necessary add water, the knead the dough until you get a smooth consistency.
Cut a little piece of dough, then roll it with the palm of your hand and stretch it at the same time: pici are handmade rough spaghetti.
Boil some salted water and cook pici for about 5 minutes.
In a pan, heat a clove of garlic, the sliced steamed pumpkin and minced tastasal.
Lower the heat and close with the lid.
Turn 1 or 2 times in about 10 minutes of cooking.
Drain pici, then add them to the seasoning stirring well. Use warm plates to serve them.
