INGREDIENTS PER 4 PEOPLE
Peppers (1 red and 1 yellow), 14 oz
Scamorza, 5.3 oz
Anchovies in EVO (drained), 1 oz
Extra virgin olive oil, 1 tbsp
Chives, to taste
Pepper, to taste
Preheat the oven to 392°F, turned on the conventional (static) mode.
Wash the peppers, remove the seeds and the whiteinner filaments and slice them lengthwise.
Cut the scamorza into strips and put it on each pepper slice.
Carefully dry anchovies from oil and put 1 or 2 fillets on each slice.
Put some parchment paper on a baking tray, then lay the slices, grease them with a little oil, add chives and pepper. Put in hot oven for 20 minutes.
