The Toma Piemontese PDO is the most widely consumed cheese at a regional level. It is made from cow’s milk, both whole or semi-skimmed, and available in small or big whole cheeses. The ripening time is at least 60 days for whole cheeses heavier than 6 kilos and 15 days for lighter ones. PDO Toma Piemontese cheese can be produced and ripened in the provinces of Cuneo, Turin, Biella, Novara, Verbania, Vercelli and in some other municipalities in the provinces of Asti and Alessandria.
