50 minutes

flour 00, 5 cups
eggs, 4
butter, 7 oz
1 +1/4 cups
baking powder, 1/2 tsp
the zest of 1 lemon
fig jam, 1 can of 8-9 oz
ceramic balls to bake the shortcrust pastry (dry beans, enough to fill the pastry)


In the bowl combine flour, cold butter, sugar, eggs, baking powder and lemon zest .
Knead for 5 min to get a homogeneous, compact mixture, create a ball and let rest for 40 minutes.
Preheat oven to 360 °F.
Cover a baking pan with baking paper and roll out the dough on it. Cover its surface with a circle of baking paper, lay on it ceramic balls (or dry beans) and bake for 10 min.
Take the tart out of the oven, remove both baking paper and the balls, spread the jam and decorate with strips of dough left. Bake for another 15 min, let cool down and serve.
