INGREDIENTS PER 5 PEOPLE
cleaned fresh sardines or smelts, 2 lb
olive oil, 1/4 cup
garlic, 2 chopped clove
fresh parsley, 1 chopped tbsp
anchovy, 2-3 chopped filets
4 fresh tomatoes, chopped
dry white wine, 1/2 cup
a pinch of salt,
hot pepper flakes
dried pasta of your choice, prepared, 1 lb
rinsed capers, 1 tbsp
lemon juice, 3 tbsp
Heat olive oil in heavy pan, add parsley, garlic, anchovies, hot pepper flakes, salt and pepper. Toss for 2 minutes and add white wine and lemon juice. Reduce till it acquires a sauce consistency.
Add sardines and tomatoes and cook over sauce for less than five minutes.
Put salted water in a large pan, when boiling, add the pasta. Adjust seasonings.
Pour the sauce over drained pasta, after removing the fish from it. Arrange fish on top and garnish with lemon slices.
