INGREDIENTS PER 4 PEOPLE

Paccheri pasta, 14 oz
Squid, 17 oz
Garlic, 2 cloves
Cherry tomatoes, 10
Olive oil
Tomato puree, 6,7 fl. oz
Salt
Pepper
Fresh chilly, 1
Fresh parsley, 1 bunch
White wine, 1/2 glass

PROCEDURE

Clean and wash the squid (or ask your fishmonger to do it!) and cut it into rings.
Then chop the tomatoes. In a saucepan stir fry the garlic with 3 tablespoons of olive oil and add the tomatoes, the chopped chilly. Cook for 2-3 minutes.
Add the white wine, the squid, salt, pepper, tomato sauce, chopped parsley and cook for about 10 minutes. Cook the pasta in salted boiling water for a couple of minutes less than said on the packet.
Once cooked, drain the pasta and add it to the saucepan with the fish. Then turn the heat on and stir it well so that the sauce will be absorbed.
Then sprinkle over some olive oil and chopped parsley…and serve!
