Paccheri, 30 paccheri
Potatoes, 5,3 oz
Sausage, 3,5 oz
Pecorino cheese, 2,5 oz
Peeled tomatoes, 7,7 oz
Extra virgin olive oil, to taste
Basil, 6 leaves
Mint, 4 leaves
Salt, to taste
Pepper, to taste
Onion, to taste


Boil potatoes with their skins. Peel and mash them when cooked.
Cook the paccheri for 6 minutes in boiling salted water.
Remove the skin of the sausage and brown it in a pan.
In a bowl, mix mashed potatoes with the sausage, pecorino cheese, mint, salt and pepper. Fill the paccheri.
Cook the paccheri in oven at 356°F for about 15 minutes, well covered. Finish cooking 5 minutes uncovered, on ventilated mode.
In a pan, brown the chopped onion in a little oil. Add the tomatoes and cook for about 15 minutes. Season with salt and add the fresh basil.
Place the paccheri on plate and season them with tomato sauce.
Finish with a little of oil to taste.
