orange, 1 medium per person
black olives in oil
high quality olive oil
Pit olives, then halve or quarter them, it depends on their size. Cut orange peel in long sections, then make candied orange peels or grate the zest and freeze or dry (in this case, remove the white inner part of the peel before cutting the orange).
Cut the oranges into 3/16 inch slices crosswise and place them on a serving plate.
Distribute the olives on the orange slices and salt lightly: bear in mind that olives are very tasty. Season with a bit of oil and serve.
