Croaker fish, 18 oz (4 fillets)
Cherry tomatoes, 10 oz
Leeks, 2
Capers,1.4 oz
Olives, 1.3 oz
Extra virgin olive oil, 3 tbsp
Laurel, to taste
Thyme, to taste
Salt, to taste
Pepper, to taste


Preheat the oven to 400°F, turned on conventional (static) mode. Rinse the leeks under water, cut them julienne and save the leaves, cut into stripes, to tie the baking foil; rinse the tomatoes under water. Prepare 4 rectangles of foil 16×8 inches and fold them to obtain 4 squares 8×8 inches.
Divide half of the leeks in the center of the foil, then on every foil lay a fish fillet, tomatoes, capers, olives and the remaining part of leeks.
Season every fillet with extra virgin olive oil, laurel, thyme, salt and pepper. Seal the wraps using the leek’s stripes. Put the baking tray in hot oven for 10 minutes at 400°F and then for 10 minutes more at 360°F. Enjoy your meal.
