The Black Pig of Calabria is a breed of pig raised in the mountains of Sila. This Black Pig is a “rustic” animal that easily adapts to the surrounding environment. He eats mostly acorns, chestnuts, tubers and wild fruits. He lives in the wild wood, and its presence in the Calabria region is essential to maintain the mountain and brush ecosystem. The ‘nduja is the most famous salami of Calabria: it has a peculiar intense and hot flavor, like the typical recipes of this Italian region.
The ‘nduja is suitable for pasta or to be served warm on toasted bread. Like other pork cold cuts also ‘nduja is rich in saturated fat: make sure to limit the use of additional fats in your recipes whenever you serve “salami” in your meal.
