Sugar, (4 12 cups)
Peels of 6 Lemons (must be Organic Lemons)
90 Proof Alcohol (90 proof means the alcohol content is 45%, by volume), 33 Oz
Water, 68 Oz


Using a wide mouth jar, place the lemon peels inside and pour the alcohol over the peels. Close the jar and leave to infuse in a dark place for about 1 week, shaking periodically. In a pot, mix the water and sugar. Bring to a low boil and boil for 5 minutes, stirring frequently. Let the mixture cool completely. Meanwhile, strain the lemon peels from the alcohol. Add the sugar syrup to the alcohol and mix well. Close with a lid and leave in a dark place for about two weeks. Filter the Limoncello once more and it is now ready to be served.
