INGREDIENTS PER 16 PEOPLE
Soft bread, 8 slices
Milk, to taste
Breadcrumbs, to taste
Salt, to taste
Pepper, to taste
Quickly dip the slices of bread in milk. Beat the eggs with a little salt and a little pepper.
Cut the mozzarella into thick slices and arrange on bread with half anchovy. Close with a second slice of bread, pass them in the beaten eggs and then in breadcrumbs.
Cover a baking tray with parchment paper and arrange the mozzarelle in carrozza on it. Pour a little olive oil and bake for about 20 minutes at 338-356°F. Remember to preheat the oven. Turn mozzarelle in carrozza halfway through cooking, until they get a nice golden brown color.
