During our 100per100 italian awards, Mario Gambigliani Zoccoli will be Ambassador of Aceto Balsamico di Modena.

Now we will know our ambassador.

Starting from the middle ’80ies Mario Gambigliani Zoccoli has developed an intense activity of research and study on the “Techniques of management and control of ABTM Acetaie with the aid of chemical and instrumental methods”. The results of these studies have been published in the book “Il balsamico della tradizione secolare” printed in 1999 by the ABTM Consortiera that is recognised as the maximum cultural body on ABTM.

While studying he has especially identified and improved the fundamental value judgment parameters to control and manage ABTM Acetaie, that are considered “to this day the only means possessed by the manager of an Acetaia that is able to furnish repeatable value judgments based on precise analytics methods”; these parameters have been officially adopted by the ABTM Consortiera in 1996 as maximum limits for the competitors to the annual contest, among the Aceti Tradizionali, named the “Palio di San Giovanni”.

On the behalf of the bodies he directs, he conducts seminaries on the ABTM and research on the taste techniques of the ABTM with the University of Gastronomic Sciences of Slow Food in Pollenzo and the Agrarian University in Turin; he also conducts seminaries in several insitutes in the province of Modena.

Apart from being the President of the Consorzio Produttori Antiche Acetaie he is also the President of the Associazione Esperti Degustatori ABTM, of which he is founding member.
It is now 10 years he is the Vice delegate for the Modena Delegation of the Italian Academy of cuisine.
