INGREDIENTS PER 4 PEOPLE
fresh anchovies, 17 oz
parsley, a small bunch
garlic, 1 clove
white wine vinegar, 4 tbsp
the juice of two lemons
salt, 1/2 tbsp
olive oil, 5 tbsp
PROCEDURE
Clean the anchovies, scale them, then remove the heads and the viscera. Rinse under running water and
fillet them by running the blade of a sharp knife over the fish. Lay the fillets on a large tray and sprinkle them with vinegar, lemon juice, 5 tbsp of olive oil, salt, chopped parsley and garlic. Let them marinate from 4 to 5 hours.
