For the dough:
Flour, 5 Oz
Icing sugar, 1 Oz
Cornstarch, 4 Teaspoons
1 pinch of salt
Butter, 6 Oz

For the lemon cream:
The juice of 4 lemons
Sugar, 9 Oz
Flour, 5 Tablespoons
Eggs, 6
Zest of 1 lemon
A bit of Powdered sugar to decorate


Preheat the oven to 180 ° C. In a bowl, mix the flour, cornstarch, sugar, salt and softened butter. Knead the dough, then flat it with a rolling pin and line a square pan (or 8 small square molds 6 × 6 cm).
Bake in the oven for about 15 minutes. In the meanwhile, in a bowl mix the sugar with the eggs, one at a time, keep stirring. Add the lemon juice and zest. Stir then pour over the dough.
Bake for 30 more minutes at 150 ° C, covering the cake with aluminum foil. Remember to remove it 10 minutes before the cooking is over.
