INGREDIENTS PER 4 PEOPLE
Mixed fresh cleaned fish, 2 lb 3,2 oz
Chopped parsley, 2 tbsp
White wine, a splash
White wine vinegar, 1 tbsp
Tomato puree, 10 fl. oz (fresh tomatoes, 4)
Finely chopped garlic cloves, 2
Olive oil, 3 tbsp + extra to sprinkle
Clean the fish and cut it into bite-sized pieces. Then clean and scrub the shellfish. Stir fry the onion and the garlic with 3 tablespoons of olive oil. When translucent add the tomato puree and cook for 8-10 minutes.
Add the fish, parsley, salt, pepper, white wine and vinegar and cook for 3-4 minutes. Add the shellfish and cook for further 5 minutes, until the fish has cooked.
Sprinkle some extra olive oil and enjoy with fresh rustic bread to mop up the juices.
