Mascarpone Cheese , 8 Oz
Eggs, 2
Sugar, 1,5 Oz + 1 tbsp
Strong coffee, 7 fl oz
Dark Cocoa Powder
Savoiardi (soft lady fingers biscuits), 3.2 oz

Make the coffee and add 1 tbsp of sugar. Then stir and let it cool down into a bowl.
Whip the yolks with the sugar until pale and creamy. Add the mascarpone and mix.
Whisk the egg whites to get a firm consistency and fold them gently with the mixture. The consistence has to be creamy and soft.
Dip the biscuits into the coffee. Pay attention not to leave them in for too long, they don’t have to be too soggy.
Put a few soaked biscuits at the bottom of each glass, then pour some of the mascarpone mixture on top and make another layer. Finish off with a dust of cocoa powder and sprinkle some pieces of chocolate on top.
Put it in the fridge for about two hours before serving.
