Used in fine preparations by the most famous international chefs, Gorgonzola cheese is a real source of inspiration for all chefs and recipe creators, as it has always an additional taste and a surprising result to create. These are our proposals.

What kind of wine?
The strong personality of this cheese – available in its soft, creamy, spicy versions – offers a great variety of tastes also influencing wine choice. Which one do you prefer?
Each kind of Gorgonzola cheese opens up a vast variety of tastes. Such marking features should be taken into consideration when choosing a wine to match.

Spicy Gorgonzola cheese requires well-structured, valuable, aged red wines:
Barolo, Barbaresco, Carema, Gattinara, Gemme, Chianti Cl. Riserva, Recioto, Amarone, Brunello di Montalcino, Cabernet, etc. Serving temperature: 18/20° C Matching with sweet wines in general is also recommended: “passito” Muscat wine or “Marsala vergine” (which is also good with desserts), and Gambellara Recioto and Ramandolo are also excellent.

Soft and creamy gorgonzola cheeses are better matched with soft, savoury red and/or white wines.
Among white wines, Riesling, Pinot Bianco, Orvieto Classico, Frascati Sup., dry Malvasia, and Gavi are excellent matches; among rosé wines: Chiaretto del Garda and Lagrein Kretzer.
And red wines in general: Valtellina superiore, Sassella, Dolcetto with any origin, slightly sparkling Barbera, Chianti Classico, Teroldego, Merlot del Triveneto, Sangiovese di Romagna, etc.

What about beer?
Beer and cheese matching is best with classic Belgian abbey beers. Matching of spicy Gorgonzola cheese and Trappist beers (Trappe, Chimay bleu, Leffe) is renowned. Soft Gorgonzola matches very well with double-malt lager beer.

And food?

Matching with mascarpone cheese and walnuts is a classical one.
Fruit, vegetables, jams, honey, mustard, chocolate… how many food types can be matched with Gorgonzola?
There is a match for every season: raw vegetables (celery, cherry tomatoes, peppers, radish), or on salads after a delicate dressing sauce has been made.
You can match it with cooked vegetables (potatoes, pumpkins, broccoli, and zucchini). Spicy Gorgonzola cheese is particularly good with fresh fruit (figs, pears, apples, kiwis, strawberries) or dry fruit, but mainly with jams and marmalades, mixed fruit or chestnut or fig mustards, and vegetable sauces (red onion sauce).

Finally, match it with honey, preferably acacia or spring flower honey.
