plain flour, 4 cups
potatoes, 2 lb 10 oz
olive oil
egg, 1


Bring a large pot of water to the boil. Clean and peel potatoes and add to the pot. Cook until tender but still firm, for about 15 minutes. Mash with a fork or a potato masher. Combine mashed potato with the egg and mix it with the other ingredients in a large bowl. Knead until the dough forms a ball. If you need, you can use other flour during this step.
After 3-4 minutes the dough will be compact: now you have to taste it to understand if you need to add another pinch or salt.
Shape small portions of the dough into long “snakes”. On a floured surface, cut the “snakes” into small pieces.
Bring a large pot of lightly salted water to the boil. Drop in gnocchi and cook for 3 to 5 minutes or until they have risen to the top; choose your favourite sauce and serve!
