For 40 cookies:
ground almond flour, 17 oz
egg whites, 1
sugar, 12, 3 oz
grated zest of 1 orange, 1 tee tsp
grated zest of 1 lemon,1 tee tsp
mix of spices – coriander, mace, cardamom, star anise, ginger, cloves, cinnamon, and nutmeg spices mix.


Whip egg whites with grated zest of citrus fruits. Fold in 300g of sugar and the ground almond flour. Cover the mixture and set aside in the fridge, at least for 30 – 40 minutes. Put 50g of sugar on a working surface and mix it with spices. Roll the dough into a sausage. Carve out small balls of dough and shape them using your hands.
Make cookies about 1 cm thick and coat them with spiced sugar. Arrange the cookies on a
baking tin covered with parchment paper and bake them in preheated oven to 200°C for about 10-
15 minutes. Store them in an airtight container.
