INGREDIENTS PER 4 PEOPLE
Eggs, 6
Onions, 7 oz
Semi matured goat cheese, 5 oz
Milk, 3.5 fl oz
Parsley, 1 tbs
Laurel, 2 leaves
Salt, to taste
Pepper, to taste
Extra virgin olive oil EVO, 3 tbsp
Traditional balsamic vinegar of Modena, to taste
PROCEDURE
Peel and cut the onions in thin slices.
In a pan sauté onion and laurel with the extra virgin olive oil for about 10 minutes; add salt and pepper.
Turn the oven to 375°F, turned on conventional (static) mode.
In a bowl mix the eggs, add parsley, milk, salt and pepper.
Add onions when warm and mix all together; cut the goat cheese in 2 inches thick slices.
Distribute the mixture in a baking tray, covered with parchment paper and distribute the cheese slices with order on the surface.
Put the baking tray in hot oven for 35 minutes after covering it with a aluminium foil, then remove the superior aluminium foil and cook 10 minutes more.
When warm, put some drops of traditional balsamic vinegar of Modena on each slice.
