INGREDIENTS PER 4 PEOPLE

Beef fillet, 30 Oz
All-purpose flour, plus extra for Coating the meat, 1,2 Oz
Aceto Balsamico di Modena, 3 Oz
Olive oil, 2 tablespoons
Beef Broth, 4Oz
Salt to taste
Chopped parsley for garnish

PROCEDURE

Cut the fillet into four equal slices and flatten slightly with a meat pounder. Lightly flour the meat and shake to remove the exceeding flour. Put the fillets on a greased plate, then salt them.

Heat a large skillet and cook the fillets on both sides over very high heat, sprinkling each with some
balsamic vinegar.

In a separate saucepan, combine the remaining vinegar, the beef broth and flour. Heat, stirring constantly, until thickened.
When the fillets are cooked, cover them with the sauce and serve garnished with parsley.
