self raising flour, 1+3/4 cup
apples, 6
sultanas, 4 tbsp
desiccated coconut, 2 tbsp
vanilla extract, 1 tbsp
the zest of one organic lemon
natural yogurt, 7 oz
eggs, 2
honey, 4 tbsp
cinnamon, 2 tsp


Peel the apples and remove the core, then put 3 of them in a food processor with yogurt and reduce into a puree. Pour it in a bowl, add the eggs, the vanilla extract, 2 tbsp of honey, lemon zest,cinnamon, 2 tbsp of coconut and the flour. Stir well, then pour the mixture on a baking tray, previously covered with sheet of baking paper.
Cut the remaining apples into thin slices and lay them over the mixture. Sparkle with the sultanas and pour 2 tbsp of honey over the apples. Cook at 340°F for 40 minutes .
