00 flour , 10 Oz
Sugar , 3,6 Oz
Extra virgin olive oil , 3,6 Oz
Eggs , 2
Baking powder , 1 teaspoon
Salt, a pinch
Lemon zest , to taste
Jam or other toppings, to taste


Separate the eggs and beat the yolks with sugar, adding oil little by little .
On the working surface, put the flour, a pinch of salt, the prepared mixture and yeast, then knead a little and add the 2 egg whites .
When the dough is ready, wrap it in the film and let it rest for 30 minutes, in the refrigerator .
Line a baking sheet with parchment paper and roll out the dough, piercing it with a fork. Bake it in the oven at 160 degrees for 10 minutes, then fill it with jam and finish cooking for another 10-15 minutes
