Cotechino Modena, 1
Rice, 300 gr
Spinach, 300 gr
Garlic
Salt
Olive oil
Lemon rind
Chives
Parmigiano Reggiano
PROCEDURE
Cook Cotechino Modena, while cooking rice.
Warm a little oil in a pan with a garlic clove and stir fry spinach for a few minutes.
Prepare the fragrant oil by warming the pan with a little grated lemon rind, a pinch of salt and of finely chopped chives.
Slice Cotechino Modena, and arrange it on the dishes with the rice and spinach.
Dress it all with fragrant oil.
