softened unsalted butter, 3,5 oz
white caster sugar, 1/s cup
medium egg yolk, 1
vanilla extract, 1 teaspoon
plain flour, 7 oz plus extra for dusting
strawberry jam, 2,1 oz
icing sugar – to dust, 1 tablespoon


Preheat the oven to 180°C, fan 160°C, gas 4. ,Beat together the butter and sugar in a medium bowl until light and fluffy. Whip the egg yolk and the vanilla extract. Add the flour and stir, then, using your hands, lightly knead to form a ball. Flour lightly the work surface, roll out the dough to a 5mm thickness. Stamp out 24 starsusing an 8cm star-shaped cookie cutter, then stamp out little stars from the middle of 12 of the biscuits using a 2-3cm star-shaped cookie cutter. Place the biscuits on lined baking parchment and put in the freezer for 10 minutes. Spread a thin layer of jam onto large stars, placing the stars with
cut-out middles on top. Bake for 10 minutes, until the biscuits surface gets lightly golden. Allow to cool on a wire rack, then serve dusted with icing sugar.
