INGREDIENTS PER 8 PEOPLE

chestnut flour, 7 oz
water, 6,7 fl. oz
raisins, 1,8 oz
pine nuts, 0,9 oz
sugar, 0,9 oz
a pinch of salt
unsweetened cocoa powder, 1 tablespoon
fresh rosemary q.s.

PROCEDURE

Preheat oven to 180 degrees, put the raisins to soak and coarsely chop the pine nuts and the walnuts.
Sift the chestnut flour and cocoa into a bowl, add the sugar and a pinch of salt. Combine water stirring with a whisk and add the drained raisins.
Pour the batter into the baking pan lined with parchment paper, sprinkle on the surface of the pine nuts, walnuts and rosemary.
Pour a little olive oil and bake for 30 minutes until the surface formes some cracks.
