INGREDIENTS PER 1 PEOPLE
medium tomato, 1 per person
mozzarella, 1 bocconcino – small mozzarella cheese, the size of an egg- per person
pesto, 1 tbsp per person
extra virgin olive oil
salt and pepper
Cut tomato in two and empty it using a spoon. Drizzle it with salt, pepper and oil. Lay mozzarella inside tomato.
Then add pesto and oil. Cover with the other half of tomato.
You can decore with chives, basil, add some drops of Balsamic Vinegar.
