INGREDIENTS PER 15 PEOPLE

Apples, 3
Lemon juice
Self raising flour, 4 Oz
Milk, 5 Oz
Egg , 1
Salt, to taste
Sugar, to coat
Icing Sugar
Vanilla Extract, 1 tsp
Oil for Frying

PROCEDURE

Peel, core and cut the apple into rings, roughly 1/2 cm thick. Toss them in lemon juice to prevent them from oxidizing and turning brown.
Coat the apple rings in sugar and separate the egg white from the yolk.  Whip the yolk with the flour, add the vanilla extract and the milk. Then whip the egg white with the salt and add it to the batter; you should get a smooth consistency with no lumps.
Heat some oil in a saucepan until very hot. Coat the apples into the batter, then fry them in the hot oil until they are golden and crisp.
Using a slotted spoon, drain them onto kitchen paper, then sprinkle with icing sugar (add cinnamon if you like).
