INGREDIENTS PER 2 PEOPLE
squid rings, 10.5 oz
all purpose flour, 3 tablespoons
paprika, 1/2 teaspoon
Cayenne pepper, 1 pinch
ground turmeric, 1/2 teaspoon
fine sea salt, to taste
tomato ketchup or thick tomato sauce, 4 tablespoons
balsamic vinegar, 1 tablespoon
freshly grated garlic, 1 tablespoon
freshly grated ginger, 1 tablespoon
chilli powder, to taste
sunflower oil, 4 fl oz
Peel the garlic and grate it. Do the same with the ginger.
Mix ketchup, or tomato sauce, with vinegar, ginger, chili powder and set aside.
Heat the oil in the fryer at 350°F.
Mix flour, paprika, Cayenne pepper, turmeric and salt in a bowl.
Dredge the squid rings in the flour mix then fry them in batches for a few minutes.
Drain on paper towels and serve with the hot sauce.
