INGREDIENTS PER 4 PEOPLE

pumpkin (if possible, red pumpkin), 17,6 oz
extra virgin olive oil
garlic
fresh mint
white wine vinegar
sugar
salt

PROCEDURE

Remove the seeds and peel of pumpkin, cut the pumpkin into thick slices about 1/2 finger…remember that most are more subtle will melt during cooking.
Pour plenty of olive oil and lightly fry the slices of pumpkin on both sides, then put it in a dish.
Combine the remaining oil with the garlic finely chopped, 5 tablespoons white wine vinegar and 2 tablespoons of sugar.
Pour the pumpkin still in the pan, so it blends well with the sweet and sour sauce, add a pinch of salt
to season, a lot of fresh mint to freshen and lighten the dish.
