whole milk, 1 cup
whipping cream, 2/3 cup
white sugar, 1/2 cup
egg yolks, 2
cinnamon, 1 tsp
carob flour, 1/2 tsp


Preheat the gelato machine before putting the bowl in. In a bowl mix the sugar and egg yolks together until you get a smooth and creamy paste.
Meanwhile, in a saucepan add milk, whipping cream, carob flour and cinnamon and boil. Remove from heat and add slowly to egg mixture, whisking constantly.
Then pour the egg mixture into the saucepan and cook whisking constantly.
Bring the mixture to a temperature of 85°C.
Turn off the heat and let the mixture cool in the refrigerator for at least an hour.
Pour the mixture into the basket of the gelato machine (for me Il Gelataio ICK5000 De Longhi) Tur it on and let work for about 30 minutes.
Once reached the desired consistency, place the cinammon gelato in a container and store in freezer until ready to use.
