milk, 1 1/4 cup
cream, 1/2 cup
white sugar, 3/4 cup
dark chocolate 80%, 1/2 pound
red hot pepper, 1
cherries, 1 pound
butter, 2 tbsp


In a pot put infuse the chopped pepper in the milk for an hour. Drain and set aside.
In a saucepan heat the cream, remove from heat, add chopped chocolate and 1/2 cup of sugar. Stir well and let it cool, then add the cold milk.
Pour into the drum of Il Gelataio – previously cooled in the freezer – and turn on the shovel. The gelato will be ready in about 25 minutes.
In a no stick pan put pitted cherries, butter and remaining sugar. Cook for few minutes at very low heat, until you have a syrup. Put them on a plate and let cool, setting aside the syrup.
Keep the gelato in the freezer until ready to serve.
Serve the gelato covered with cherries and syrup.
